Blackberry Glazed Easter Ham

Ingredients:

1 Spiral Ham (Approximately 10 pounds)

5 cups fresh Blackberries

1 cup Ketchup

1 Cup Honey

1 cup Minced and Peeled Fresh Ginger

2 Tablespoons Balsamic Vinegar

3 teaspoons Tabasco Original Sauce


Directions:

To Cook Spiral Ham:

It is always best to consult the cooking label accompanied with most Spiral Sliced Hams, however here are some cooking tips,

1.) USDA recommends pre-cooked Ham be reheated to an internal temperature of 140 degrees.

2.) Always cook hams with the “fat side up” in an open shallow roasting pan.

3.) Leave uncovered

4.) Bake at 325 degrees for approximately 8 minutes per pound

To glaze the ham remove the ham from the oven once it reaches 140 degrees internal temperature. Increase the oven temperature to 425 degrees. Using a basting brush glaze the ham generously with your Blackberry Glaze and return to the oven for 4-6 minutes until the glaze is set and bubbly all of the outside of the ham crust. 

(Note: this glaze is a bit thinner consistency than some other "packaged" accompanying "glazes" it is imperative at this stage that you watch the cooking closely or the coating glaze could burn)

Apply an additional generous fresh glossy coat of Blackberry glaze prior to serving. Serve with additional Glaze on the side. I find it best to serve the Glaze in a gravy boat with the basting brush for serving.

To Make Glaze:

Blend Blackberries, Ketchup, Honey Ginger, Vinegar, and Tabasco until liquified. Strain through a fine sieve into a sauce pan; (to remove ginger fibers and blackberry seeds.) cook just simmering, until mixture has reduced and thickened yielding about 2 cups, stir frequently to avoid scorching. Season to taste with Course Salt and Fresh Cracked Pepper.
